French Onion Soup with Croque Monsieur Slices
- 2 cups White onions, thinly sliced lengthways
- 2 tbsp butter
- 3 tbsp flour
- 4 cups chicken stock
- 1 Baguette bread
- Mustard Dijon
- Smoked turkey, sliced
- Parmesan & Mozzarella, grated
- 1 tbsp Olive oil
- Salt & black pepper
Fry the onions in the butter and olive oil, sprinkle the flour on them and keep stirring on medium to low heat until the onion have caramelized or have turned into a golden color. Then, add 4 cups of chicken stock, salt and black pepper. Bring to the boil, then simmer, covered for 20 minutes until sauce thickens (stirring halfway through). Remove from heat.
For Croque Monsieur slices:
Cut the baguette in diagonal slices or slightly slanted. Make the slices by spreading them with ½ tsp of mustard. Then, top each with a slice of turkey and the grated cheeses. Pour the soup into individual serving bowls then place 2 croque monsieur slices on each bowl. Grill or broil until the cheese melts and serve immediately.
