I made crispy zaatar crackers today. This would be an excellent snack for people practicing vegetariansm during Lent. I used a basic homemade pizza dough. I rolled the dough very thin, you can use a pasta machine if you have one, although a… rolling pin will do just fine. After rolling, I used a cookie cutter to cut out rounds and spread zaatar mixed with olive oil thinly onto each round. Bake for 10 minutes or until crispy. For those of you unfamiliar to zaatar, its a mix of thyme, summac and sesame seeds available at middle eastern stores. When mixed with some olive oil, it forms a paste that can be spread onto bread.
